Kabuse Sencha Gokou

This cultivar is most often used for gyokuro and matcha, but here we have finished it as a kabuse (shaded) sencha.

Single-origin Gokou is known for a strikingly full sweetness and umami that come straight from the leaf itself.
The first infusion has almost no astringency or grassy notes: a rich, dashi-like umami, sweetness, and a deep, mellow aroma that fill the senses.
The second infusion still has hardly any astringency. The umami and sweetness remain, now with a rounder mouthfeel and the fresh, lively side of Gokou adding depth.

"Kyoto Wazuka"
For over 800 years, Wazuka-cho, Kyoto has continued to produce high-quality tea, continuing traditions. In climates where the temperature difference between day and night is large and fog tends to occur, it helps block direct sunlight on the tea leaves, making it suitable for growing high-quality, sweet tea leaves.

Sencha Yabukita The quality of sencha is extremely high, with a mild aroma and a perfect balance of sweetness and astringency.
It has a good balance of tea-like refreshing astringency, and the astringency does not linger, giving it a familiar, approachable taste.

"Asamiya, Shiga Prefecture"
Asamiya is located on the border of Kyoto and Shiga prefectures. Said to be the oldest tea-producing area in Japan, it is said to be one of Japan's five great tea-producing regions. At an altitude of about 400m, the temperature difference between day and night is large, and tea leaves grown in a foggy climate bring out the original sweetness and umami of tea, making it a suitable production area for tea cultivation.
